Baked Maple Cup Custard

Serves 4


*      4 eggs
*      1/3 cup sugar
*      3 cups milk
*      1/2 tsp vanilla extract
*      freshly grated nutmeg
*      maple syrup to taste


Preheat oven to 350 degrees Fahrenheit. In a bowl, beat the eggs with a whisk or wooden spoon. Beat in sugar and salt. Stir in milk and vanilla. Pour into four custard cups, each about 8 oz capacity. Top each with a sprinkling of nutmeg. Place filled cups in a baking pan. Fill pan halfway to the tops of the custard cups with boiling water. Bake in oven for 45-55 minutes or until center of custard is firm, which you can check by jiggling the cups. Serve either hot or chilled, with maple syrup on top.

Wondering why this baked custard need to be surrounded in water while it cooks?

Another great way to tell whether a baked custard is done, is to insert a knife into the custard, just off-center. If the knife comes out clean, the custard is cooked. The custard will continue to cook through to the center after it's removed from the oven.
