The tip about leaving the pasta for a few minutes is definitely the trick to this.

I hope members could help me this. I find many times that my tomato sauce is salty, hope you can give me information how can I make the taste not too much salty but the tomato flavor will  not be affected.

Pasta in Vodka Sauce


1. 1 onion, chopped
2. 2 stalks celery, chopped
3. 3 cloves garlic, minced
4. 1/4 cup olive oil
5. 1/4 pound thinly sliced prosciutto
6. 3/4 cup vodka
7. 1 (28 ounce) can crushed tomatoes
8. 1/4 teaspoon dried oregano
9. 2 tablespoons chopped fresh parsley
10. 1 tablespoon dried basil
11. 1/4 teaspoon cayenne pepper
12. 1 cup half-and-half cream
13. 1 pound of pasta


1. In a large skillet, heat oil over medium heat. Cook onion, celery, and garlic in oil; stir until soft. Add prosciutto and vodka. Simmer until almost all liquid is gone.
2. Add tomatoes, cayenne, and herbs. Simmer for 10 minutes.
3. Stir in half and half, and heat for 3 minutes.
4. Meanwhile, cook pasta in boiling salted water until done. Drain. Serve sauce over noodles.

I always find that once the sauce sit on the pasta like for leftovers it always taste better and is seasoned more.

To make tomato sauce stay on pasta, add little corn flour it makes the sauce little thick. Also after making the pasta let it cook for more time (5 minutes). That should help
@Lance Ruch: I suggest that you add little extra vinegar. That should help.
