Hi, I am a bad cook
Have been trying to make fudge for years.
Today I tried again with a recipe that has everything cooked together.
Cream, butter, sugar cooked to 240 I did stir once after it started boiling and did a poor job of scraping the sides.
Added vanilla did not stir and after it cooled down to 110 degrees I started to stir and it separated into gooey caramel and butter.
What happened this time?
I want to make burnt sugar fudge and gave up a few years ago on the recipe I had for it, would not set.

forgot to write that I did add corn syrup too.
