Does anyone know any good pastas that are produced with alternative ingredients? Any hidden gems to be known about?

Drain the pasta as usual. If the pasta appears to be drying out add back a little of the water. This way you are getting moist pasta and keeping the pasta flavor true, instead of having slimy pasta that tastes like oil, margarine or butter.

You can't really go to far wrong with pasta, stick it in a pan of boiling water and leave it until its nice and soft (depending how you like it!)

Just a simple tip, pour 1-2 tbsp of cooking oil on the boiling water to avoid stickiness of the pasta while cooking Roll Eyes

Whenever I'm uncertain as to what to cook, pasta is always one of the easier choices.
Once you learn the basics and you make a dish, try experimenting with the ingredients.
Add different herbs and spices, vegetables, meat, chicken or just plain tomato sauce.

Making a simple pasta dish is super easy!  But you need to ask yourself a couple of questions; do you want spicy, all veggie or what kind of meat to add; chicken, beef, fish or pork.  start there.

this is very easy. You can ask help form the internet. Just search on how to make a pasta.
