Cake dry and thick texture please help (Read 6650 times)

Well I am going crazy since I have some sort of "curse" with cakes hahahaha.
I manage to make them taste great but the texture I get is never the one I expect.
I have tried many baker`s formulas and different recipes and I always get the same type of result "dry and thick" instead of moist and fluffy.

Can anyone give me a proved recipe to get a moist fluffy and soft cake?

I am going to write the last recipe I used so maybe someone can point out any mistake in portions or if you notice anything please let me know.

BASIC CHIFFON CAKE

1/3 cup of sugar
1/4 cup of vegetable oil
1tbsp of butter (for flavor)
1 cup of cake flour (if desired use 1/2 of white flour and 1/2 cup of whole wheat)
1/2 cup of cornstarch (supposedly makes the cake fluffier since it doesn`t allow gluten to form strong links)
1 tsp of white vinegar
1 tbsp of baking powder
2 tbsp of milk or yogurth
2 eggs
1 tbsp of vanilla

I am always careful with the mixing method I use and I know I shouldn`t mix the flour too much to not form a lot fo gluten yet, I always end up having this dry thight crumble.

Please guide me, what is wrong???

Hi!
For starters, I'd leave out the whole wheat flour and corn starch.
These two ingredients will only make the cake heavy.
For a lighter texture, combine rice flour with the cake flour.

Add an extra egg and a little more oil, or butter to add to the moistness.
You might also add some dry milk powder to the cake mixture, as this adds flavor and when mixed with a little water, helps the cake retain moisture.


OVEN TIP:
When baking the cake, place it on the middle rack... On bottom rack, place a pan of hot water.
This helps create steam in the oven, and helps keep the cake moist.
