I've been trying to replicate an elderberry champane recipe off the TV but I dont think its fermenting right, is there anything I can add to the mix to kick it off.

I want to get this right before I move on to nettle beer.

Regards

It is hard to tell what could be added because I don't know what recipe you used Huh

Make sure it has the right amount of sugar and champagne yeast. Maybe your recipe from tv doesn't work well. Try a search in google for elder berry champagne recipes.

I hope that helps.

It does indeed depend on what you put in it in the first place.  One thing I have done if the fermentation goes wrong is distill into a harder liquor.  If it goes to vinegar, you've had it though...

Now that's hard core - making the bubbly from elderberries.  Maybe it would be easier to liquify elderberries, reduce it down to a near-extract and add a splash to a sweet freshly uncorked bottle ( drink one glass first, so you have room to pour in the elderberry extract.  It's just an idea.  It seem infinately easier than making the stuff.

Its not the berries you use but the flowers!

Interesting subject. I have not heard of making champagne from elder berries. I have used elder flower which is collected from the shrubs in the spring time and this can be made as a cordial or champagne.
It is so long ago I did the champagne recipe I cannot remember the ingredients, but it was very easy to do. Cool
