Thanks for sharing your information. I quite agree that home-baked bread the benefit of having high quality constituents, better flavor, texture and longer shelf life. I always buy bread from the supermarket, and the bread don't taste very good. I would try to bake bread at home  Grin

I "cheat" and use a bread machine for my breads, but my favorite is probably the one that is 1/3 rye flour, 1/3 spelt and 1/3 white bread flour.

I've used up to 3/4 of the rye and spelt and 1/4 white, but it has too dense a texture then.

I love home-baked bread; and what's even nicer is that it doesn't have all those chemical preservatives.

Oh, and when the bread gets stale, it makes wonderful french toast!

Well no matter what i tried, it always end up like stone when i get it out of oven. Its really so thick and if i throw it on someone else, it probably kill someone..

Any trick for that ?
