i have tried everything from sugar to carrots to try to make my spaghetti sauce not bitter...i also don't like the sauce sweet..in the end i always have to add red pepper to cover the taste...does anyone know a good recipe for spaghetti sauce that doesn't taste bitter or sweet?

I like to use Porto.  Don't confuse it with port wine.  I'm talking about Porto from Portugal.  It's nicely sweet, but not much.  It's a bit heavier than wine and tends to give a nice aromatic flavor and taste without being too sweet.  It's kind of a rich sauce additive, you'll think you've gone to heaven when you perfect using Porto in sauce.

Couple of cups of red white will cut the bitterness.
