sorry - language problem. In Australia we call candy - lollies, and hard candy on a stick - lollipops. Popsicles are called icy poles. !!????

So I guess I want to know if I can substitute juice for water in the following recipe that I found on this "Accidental Scientist site". Or will the juice change the hardening of the candy?

1 cup sugar
1/3 cup corn syrup
1/2 cup water
1/4 teaspoon cream of tartar
1/4 to 1 teaspoon flavoring
liquid food coloring
1 to 2 teaspoon(s) citric acid (optional)

ITs better to check those artifical colors properly before placing them in your meal. Sometimes when expired can lead to Food poisining and stuff like that.

Artificial flavors are nothing but chemicals do harm to health especially for the kids.

Making lollipops sound like a really cool idea and a good project for me and my kids.

I think that you will get enough natural citric acid when you do that.  Wink
